Ok ya’ll, fall has finally arrived! And what better way to celebrate the fall season, then by enjoying a delicious pumpkin oatmeal? If you’re anything like us, you love anything pumpkin related at this time of year. Pumpkin spiced lattes, pumpkin candles, pumpkin seeds, you get the point. You’re going to want to eat this one cozied up by the window with a good book and maybe a cup of coffee, hot coco or tea. This pumpkin oatmeal is hearty, filling and leaves you feeling nourished and ready to take on your day. This is our go to fall meal to start the day, we hope you enjoy it as much as we do, enjoy!

Vegan Pumpkin Oatmeal
Ingredients
- 1/2 cup of oats
- 1/2 cup of oat milk
- 1 ripe banana
- pinch of salt
- 1/2 cup pumpkin puree
- 1 tbsp maple syrup
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- desired toppings (see notes)
Instructions
- Heat a pot on the stove over medium/high heat.
- Add in the oat milk, oats and a pinch of salt.
- Simmer for 2-3 minutes.
- In the meantime, mash your ripe banana with a fork.
- Add the mashed banana, pumpkin puree, maple syrup, pumpkin pie spice and cinnamon to the pot, stir to combine.
- Turn the heat down to medium/low and let simmer for another 2-3 more minutes. Turn down if the oats are bubbling.
- Serve oatmeal in a bowl.
Notes
Prep this pumpkin oatmeal on a Sunday and you can make enough for the week if you’d like, just double up the recipe according to how many servings you’d like. It’s super quick to make and makes an excellent meal prep option. We guarantee your whole family will love it!
