Vegan Pumpkin Oatmeal

Ingredients
1/2 cup of oats
1/2 cup of oat milk
1 ripe banana
pinch of salt
1/2 cup pumpkin puree
1 tbsp maple syrup
1/2 tsp pumpkin pie spice
1/2 tsp cinnamon
desired toppings (see notes)
Instructions
Heat a pot on the stove over medium/high heat.
Add in the oat milk, oats and a pinch of salt.
Simmer for 2-3 minutes.
In the meantime, mash your ripe banana with a fork.
Add the mashed banana, pumpkin puree, maple syrup, pumpkin pie spice and cinnamon to the pot, stir to combine.
Turn the heat down to medium/low and let simmer for another 2-3 more minutes. Turn down if the oats are bubbling.
Serve oatmeal in a bowl.
Notes
Topping ideas: fresh or frozen fruit, vegan yogurt, nut butter and coconut shreds. Pick whichever toppings you have and/or like!
