Vegan Pumpkin Oatmeal

Here's how to make the perfect serving of pumpkin oatmeal on the stovetop. Perfect for fall when you have left over pumpkin puree!

Ingredients
  

  • 1/2 cup of oats
  • 1/2 cup of oat milk
  • 1 ripe banana
  • pinch of salt
  • 1/2 cup pumpkin puree
  • 1 tbsp maple syrup
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • desired toppings (see notes)

Instructions
 

  • Heat a pot on the stove over medium/high heat.
  • Add in the oat milk, oats and a pinch of salt.
  • Simmer for 2-3 minutes.
  • In the meantime, mash your ripe banana with a fork.
  • Add the mashed banana, pumpkin puree, maple syrup, pumpkin pie spice and cinnamon to the pot, stir to combine.
  • Turn the heat down to medium/low and let simmer for another 2-3 more minutes. Turn down if the oats are bubbling.
  • Serve oatmeal in a bowl.

Notes

Topping ideas: fresh or frozen fruit, vegan yogurt, nut butter and coconut shreds. Pick whichever toppings you have and/or like!
