This month we’re serving up a quick and easy breakfast meal as we head into the winter months. This tofu scramble is packed with flavour and nutrition and will keep you full all morning! And the best news is, it’s vegan! It pairs nicely with some fresh bread and a warm cup of coffee, but really you could make this meal into anything you’d like. It’s one of our personal favourites. Feel free to all add any greens you’d like or avocado to this recipe, it pairs well with lots of items. Enjoy!

Vegan Tofu Scramble
Ingredients
For the tofu scramble:
- 1 tbsp olive oil
- 1/2 yellow onion, sliced
- 1/3 block of firm tofu
- 1/3 cup of plant based milk
- 1 tbsp turmeric
- 1 tbsp garlic powder
- 2 tbsp nutritional yeast
- salt + pepper to taste
What to serve with the tofu scramble:
- Toast with vegan butter (or vegan mayo)
- Sliced avocado
- Baked beans
- Vegan bacon or sausage
- Grilled potatoes or hash browns
- Steamed or sautéed kale
Instructions
- First, dice onions and set aside.
- Crumble the tofu into a bowl. Add the plant based milk and mash well (you can use a fork, your hands or a potato masher).
- Add the turmeric, garlic powder, nutritional yeast, salt and pepper into the bowl of mashed tofu. Mix together well. Set aside.
- Heat the olive oil in a pan over medium heat.
- Add onions and sauté for 3-4 minutes, stirring occasionally.
- Add in the tofu mixture.
- Cook for another 4 minutes, stirring frequently.
- Serve immediately with any variety of the above recommended items.
