Spring is here and we are living for it! We’re so excited to start prepping some more fresh, light and delicious dishes for spring and summer. This may just be our favourite time of year! Ok, well just about. Summer may come in first place, nothing beats the summer sun. 🙂 May’s recipe is a delicious and plentiful broccoli salad. This dish is light and flavourful but packs a hearty punch. Broccoli is full of important nutrients our bodies need to feel our best.
Add this broccoli salad to your weekday meal prep or toss it together for your next family dinner. The mix of sweet and savoury flavours are a wonderful combination.

Vegan Broccoli Salad
Ingredients
For the dressing:
- 2 tbsp hemp hearts
- juice of 1 lemon
- 2 tbsp maple syrup
- 2 tbsp tahini
- 1 tsp dijon mustard
- 1/2 cup water
- 1 tbsp garlic powder
- salt + pepper to taste
For the salad:
- 1 head of broccoli, chopped into small bite sized pieces
- 1 red onion, thinly sliced
- 1 apple, chopped into small bite sized pieces
- 1/2 cup dried cranberries
- salt + pepper to taste
Instructions
- Prepare the dressing by combining all the ingredients into a blender or food processor. Blend until creamy and smooth. Set aside.
- Chop the broccoli and apples into small bite sized pieces. Add to a large mixing bowl.
- Thinly slice the red onion and add to the bowl.
- Add the dried cranberries to the bowl.
- Pour the dressing over the broccoli mix and stir to combine.
- Season with salt and pepper to taste.
- Serve immediately or refrigerate until ready to serve!
