Vegan Broccoli Salad

A simple, classic staple for any cookout- Broccoli Salad. Our version is vegan + oil free. Enjoy!

Ingredients
  

For the dressing:

  • 2 tbsp hemp hearts
  • juice of 1 lemon
  • 2 tbsp maple syrup
  • 2 tbsp tahini
  • 1 tsp dijon mustard
  • 1/2 cup water
  • 1 tbsp garlic powder
  • salt + pepper to taste

For the salad:

  • 1 head of broccoli, chopped into small bite sized pieces
  • 1 red onion, thinly sliced
  • 1 apple, chopped into small bite sized pieces
  • 1/2 cup dried cranberries
  • salt + pepper to taste

Instructions
 

  • Prepare the dressing by combining all the ingredients into a blender or food processor. Blend until creamy and smooth. Set aside.
  • Chop the broccoli and apples into small bite sized pieces. Add to a large mixing bowl.
  • Thinly slice the red onion and add to the bowl.
  • Add the dried cranberries to the bowl.
  • Pour the dressing over the broccoli mix and stir to combine. 
  • Season with salt and pepper to taste.
  • Serve immediately or refrigerate until ready to serve!

Notes

I prefer this salad chilled in the fridge, so I will prepare it a few hours before serving it and let it chill in the fridge. It is also a great meal prep idea for lunches!
