Baked Banana Oatmeal

INGREDIENTS TO MAKE BAKED BANANA OATMEAL

  • Bananas: Use overripe bananas that are easy to mash
  • Oats: Use old fashioned oats for this recipe
  • Vanilla extract: For flavour and sweetness
  • Non dairy milk: I use oat milk, since it’s my go-to
  • Maple syrup: To naturally sweeten the dish
  • Baking powder: This helps add a light + airy texture
  • Cinnamon: To add a little sweetness and flavour
  • Ground flaxseed: Helps to bind the ingredients

Baked Banana Oatmeal

This dessert like breakfast is rich, hearty and the best way to wake up in the morning!

Ingredients
  

  • 2 ripe bananas + 1 more for topping optional
  • 2 1/2 cups of non dairy milk
  • 1 tsp vanilla extract
  • 1/4 cup of maple syrup
  • 2 1/2 cups rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 2 tbsp ground flax seed
  • 1/4 tsp sea salt

Instructions
 

  • Preheat the oven to 350F.
  • Peel and mash 2 bananas into a 8×10 baking dish.
  • Add the non dairy milk, vanilla extract and maple syrup to the dish and mix until well combined.
  • Add the oats, baking powder, cinnamon, flaxseed and salt. Mix well.
  • Top with sliced ripe banana, if desired.
  • Bake in the oven for 30 minutes
  • You can serve this dish immediately after baking. Any leftovers can be left out to cool and then sliced into bars.
  • Serve warm or cold.

Notes

Leftovers will keep in the fridge for up to 5 days
For the best flavour and sweetness, make sure your bananas are ripe.
