Baked Banana Oatmeal

- 2 ripe bananas + 1 more for topping optional
- 2 1/2 cups of non dairy milk
- 1 tsp vanilla extract
- 1/4 cup of maple syrup
- 2 1/2 cups rolled oats
- 1 tsp baking powder
- 1 tsp cinnamon
- 2 tbsp ground flax seed
- 1/4 tsp sea salt
Preheat the oven to 350F.
Peel and mash 2 bananas into a 8x10 baking dish.
Add the non dairy milk, vanilla extract and maple syrup to the dish and mix until well combined.
Add the oats, baking powder, cinnamon, flaxseed and salt. Mix well.
Top with sliced ripe banana, if desired.
Bake in the oven for 30 minutes
You can serve this dish immediately after baking. Any leftovers can be left out to cool and then sliced into bars.
Serve warm or cold.
Leftovers will keep in the fridge for up to 5 days
For the best flavour and sweetness, make sure your bananas are ripe.
