Can you believe we’re into the second half of summer?! Truthfully, we’d rather not go there. Basking in the summer sun has been glorious, we’re so excited to keep the summer vibes going. August is all about fresh fruit and finding the time to make quick and easy meals you can enjoy anywhere. This month we’re serving up a fresh green smoothie bowl that will keep you smiling all day long. This green smoothie bowl is packed with fruit AND vegetables, a definite crowd please. Your kids or your hubby 😉 are sure to love it!

Green Smoothie Bowl

Simple green smoothie bowl that is packed with greens and customizable toppings! This is a great way to turn a smoothie into a meal.

Ingredients
  

  • 1 heaping handful of spinach
  • 1/2 cup orange juice
  • 1 cup of frozen mangos
  • 2 frozen bananas
  • splash of plant milk (or orange juice/water) may be needed if not using a high speed blender*
  • optional: I like to add a pinch of turmeric powder and black pepper (you don't taste it at all and it's a great way to get your daily turmeric in!)
  • desired toppings (see notes)

Instructions
 

  • Add the spinach and orange juice into the blender. Blend until it becomes a smooth green liquid.
  • Add in frozen mangos, banana, turmeric and black pepper.
  • If you’re using a high speed blender, start on the lowest setting and use your tamper to move around the contents. (If you’re not using a high speed blender, you may need to stop the blender, use a spoon to push down the ingredients and continue that process. This is also where you might need an extra splash of liquid if you’re not using a high speed blender.)
  • Once all of the ingredients start to combine, turn up the speed to finish the blending process to get that thick and creamy consistency.
  • Serve it in a bowl and add your desired toppings.

Notes

Topping ideas: fresh or frozen fruit, cacao nibs, coconut shreds, nut butter, granola, vegan yogurt, nuts, seeds, or any other toppings you like.
Blend the ingredients with as little liquid as possible. More liquid will create a runnier smoothie, while less liquid will create a thicker smoothie. A high-powered blender works best because it will allow you to blend the ingredients with minimal liquid. You want your smoothie bowl to be nice and thick so you can eat it with a spoon and your toppings don’t sink to the bottom of the bowl! Use frozen fruit in smoothie bowls, it will create a more creamy texture than fresh.
