Easy Vegan Sheet Pan Dinner with Maple Dijon Dressing

This Vegan Sheet Pan Dinner is a healthy weeknight meal that is quick and easy to make! Colourful vegetables and tender bites of tofu are topped with a delicious maple dijon dressing.

Ingredients
  

  • 1 yellow onion chopped
  • 1 head of broccoli cut into florets
  • 1/2 block of extra firm tofu cubed
  • 3 potatoes chopped into small cubes
  • 1 bell pepper chopped
  • 1 tbsp olive oil
  • 1 tbsp dried basil
  • 1 tbsp dried parsley
  • 1 tbsp garlic powder
  • Salt and pepper to taste

For the Maple Dijon Sauce:

  • 1 tbsp tahini
  • 2 tbsp maple syrup
  • 2 tbsp smooth dijon mustard
  • Juice of 1/2 lemon

Instructions
 

  • Preheat the oven to 425F.
  • Prepare a baking sheet with parchment paper and set aside.
  • Start by cubing the tofu and place it in a large mixing bowl.
  • Chop the onion, broccoli, potatoes, and pepper and add to the bowl with the tofu.
  • Add the olive oil, basil, parley, garlic, salt and pepper and stir to combine.
  • Place onto the parchment lined baking sheet.
  • Roast in the oven for 20 minutes.
  • Meanwhile, stir together all sauce ingredients, adding 1 tsp of warm water if needed for a pourable consistency. (If your tahini is on the thicker side you may need the water.)
  • After the 20 minutes, toss the veggies around.
  • Bake for another 20 minutes, until everything is cooked and golden brown.
  • Plate the veggies and tofu.
  • Drizzle the sauce on top and serve immediately.
