Preheat the oven to 425F.
Prepare a baking sheet with parchment paper and set aside.
Start by cubing the tofu and place it in a large mixing bowl.
Chop the onion, broccoli, potatoes, and pepper and add to the bowl with the tofu.
Add the olive oil, basil, parley, garlic, salt and pepper and stir to combine.
Place onto the parchment lined baking sheet.
Roast in the oven for 20 minutes.
Meanwhile, stir together all sauce ingredients, adding 1 tsp of warm water if needed for a pourable consistency. (If your tahini is on the thicker side you may need the water.)
After the 20 minutes, toss the veggies around.
Bake for another 20 minutes, until everything is cooked and golden brown.
Plate the veggies and tofu.
Drizzle the sauce on top and serve immediately.
