Preheat the oven to 350 F.
Oil a baking dish and set aside for the time being.
Peel, core and slice the apples.
Combine the sliced apples with the rest of the apple ingredients: lemon juice, maple syrup, cinnamon and nutmeg. Stir to combine.
Place the apple mixture into the baking dish.
Next prepare the oat crumble. Combine the oats, vanilla, brown sugar, salt and maple syrup into a bowl and stir.
Spread the oat crumble mixture on top of the apples in the baking dish.
Bake in the oven for 40-45 minutes or until oats are golden brown and crispy.
Serve warm as is or top with a vegan ice cream. Enjoy!
